Name: Paul Williams
Course: Catering and Hospitality
Where are they now?: Senior Sous Chef Pastry, Le Manoir aux Quat' Saisons Restaurant
"I now work for celebrity chef Raymond Blanc OBE at the famous Le Manoir aux Quat’Saisons restaurant in Oxfordshire. Since leaving Deeside College I have had the opportunity to work as a pastry chef in some of the top kitchens in the country and have also spent time working in restaurants around France. In 2000 I was lucky enough to win the "Award of Excellence" from the Academy of Culinary Arts and only last year won a gold medal for an artistic sugar piece at Hotelypia.
My time at Deeside College was an invaluable experience of the catering industry as a whole and gave me the opportunity to discover my future desire to work as a pastry chef. College also taught me the skills I needed to get my first job in the trade and to strive for excellence, which is also a value shared by Raymond Blanc at Le Manoir. Without the knowledge and passion passed on to me by the lecturers at Deeside College I would not be where I am today."
